I don't like spending hours in the kitchen but I do like to be prepared for the coming weeks meals. On a weekend, or one night during the week, I will put a couple of hours aside to get meals organised for the week. Here's my lazy salad that I thought I'd share with you. This salad is full of fibre, including prebiotic fibre, which as you know by now is good for your gut bugs. I don't use a creamy dressing very often as it will last longer with just a simple extra virgin olive oil, garlic, and lemon juice dressing. You can make your own version of course to suit your taste. Summer is coming so it's easy to get things like this salad made quickly and it will last a few days in an airtight container and stay crisp because the dressing isn't creamy. All you need to add is a nice piece of protein and a BBQ is perfect for that. Enjoy!
