I was shopping today and checking things out as you do when I came across Konjac noodles. I always read the labels of food and it's a great habit to get into. I haven't seen these before and yes they are on a shelf with a lot of ultra processed imported foods which I don't love but this is the first time I've seen them anywhere. Could be because I live in Tassie and we're a bit isolated :). The reason I'm so interested is because Konjac is a great prebiotic and these noodles have < 0.5g Carbs, < 0.5g sodium, 3.7g fibre per serve (100g) and they're soluble fibre which your gut bugs love. I'd rather have something fresh but I'm going to test them out and see what they're like. Good old Catherine Saxelby has already done a review. I made a vegetable Chow Mein with these and it was superb! A great meal that also provides prebiotics, fibre and an abundance of other necessary nutrients.
